I’m sort of a curry snob. There aren’t many whose curry I’ll willingly eat. Often times other people’s curry is too spicy, has way too many bones, or is made only from water and curry powder — yaaawwk! Lol. I absolutely prefer my curry recipe to most and pairing it with roti skin and pumpkin is orgasmic! But we’ll talk about roti some other time 🙂 …Actually no, because it’s too complicated to make which is why I’ve never attempted lol.

CURRIED CHICKEN

  • 6 heaping tbsp curry powder
  • 1 can coconut cream
  • 1/2 can water (more or less)
  • banana peppers
  • green peppers
  • red peppers
  • onion
  • potatoes
  • carrots
  • coconut oil (secret ingredient to Caribbean cooking — your welcome :-])
  • chicken breast and/or thigh

Directions: Season the chicken with 2 tbsp worth of  curry powder and leave overnight. Next day, brown chicken pieces by coating frying pan with coconut oil. In large pot add chicken, chopped peppers, onions, potato and carrots. Pour coconut cream and water into pot with other ingredients. Mix in remainder of curry powder. Cover the pot and allow it to simmer on med for 30-45 mins.

COCONUT RAISIN RICE

  • long grain rice
  • grated carrots
  • raisins
  • water
  • coconut oil
  • salt

Directions: Cook the rice as usual, but add raisins, coconut oil and carrots.

In the video above, I used coconut cream concentrate instead of the canned version and added a side of tomato and avocado. In all honesty, this will taste better on day 2 after the spices have had time to marinate and simmer.
